2004-SEP > Belgian Endive Trials
In 2004, Lynch Creek tested the feasibility of producing Belgian Endive – an interesting biennial. Mature plants were topped and the roots dug and dried this fall, and then vernalized (kept at a cold temperature) over the winter.
The roots will then be re-planted and hydrated in darkness to produce delightful, white endive heads in 2005.
We should have a limited supply available for trial by area chefs and caterers in 2005.
